Spicy Pineapple Fried Rice

The Best Way to Eat Fried Rice

Sweet, spicy and oh so delicious.

Cookware & Appliances Needed

  1. Stovetop or Hot plate
  2. 13 inch Wok
  3. Utensil to cook
  4. Cutting board
  5. Knife of choice

Ingredients

  1. Cooked Rice (a day old) – 2 cups
  2. Fresh pineapple (bite-sized) – 65 grams
  3. Cashews (lightly salted) – 3 TBSP
  4. Chicken (cubed & cooked) – 1 cup
  5. Roma Tomatoes (quartered) – 15 grams
  6. Garlic (minced) – 1/4 TSP
  7. Onions (thinly sliced) – 8 grams
  8. Shallots (thinly sliced) – 8 grams
  9. Thai Chili Powder – 1/4 TSP
  10. Chicken Bullion – 1 1/2 TSP
  11. Curry Powder – 1/2 TSP
  12. Soy sauce – 1 TSP
  13. Fish Sauce – 1/4 TSP
  14. Olive Oil – 3 TBSP

Instructions

  • Begin by: Adding 1 TBSP olive oil (of the total 3 TBSP) to the wok over medium heat.
  • Then add your garlic, thinly sliced onions, thinly sliced shallots, and Thai chili powder.
  • Once fragrant, add Roma tomatoes and pineapples.
  • Once tomatoes and pineapples are slightly soft, add your cooked rice and 2 TBSP olive oil (of the total 3 TBSP).
  • After breaking apart all the clumps of rice, add your cooked chicken.
  • Now add soy sauce, fish sauce, chicken bullion, and curry powder. Attempt your best wok toss skills here.
  • Once seasoning is evenly distributed, add your cashews and turn off heat.
  • Enjoy!
