Pad Kra Pao (Ground Turkey & Holy Basil Stir-Fry)

A Thai classic

The easiest Thai entrée for beginners.

Cookware & Appliances Needed

  1. Stovetop or Hot plate
  2. 13 inch Wok
  3. Utensil to cook
  4. Deep colander
  5. Glass measuring cup
  6. Water kettle

Ingredients

  1. Ground Turkey – 3 lbs
  2. Thai basil – 164 grams
  3. Thai chili powder – 1 TSP
  4. Garlic (minced) – 1/2 TBSP
  5. Onion powder – 1/2 TBSP
  6. Black pepper – 1/4 TBSP
  7. Fish sauce – 1 1/4 TSP
  8. Soy sauce – 2 TBSP
  9. Sesame oil – 1 TBSP
  10. Oyster sauce – 3 TBSP
  11. Palm sugar – 1 cube
  12. Water, heated – 2/3 cups
  13. Olive Oil – 2 TBSP

Instructions

  • Begin by: Dissolving palm sugar with hot water in a glass measuring cup.
  • Once dissolved, add your oyster sauce, soy sauce, fish sauce, sesame oil, onion powder, and black pepper. Give a good mix.
  • In a wok over medium-high heat add olive oil.
  • Once heated, add garlic and Thai chili powder.
  • After aromatics are released, add your ground turkey.
  • When ground turkey is slightly cooked, pour in half of your seasoning mixture. If you want to drain the moisture/ grease, do so before adding the rest of your seasoning mixture.
  • Once ground turkey is cooked and the entire seasoning mixture has been added, turn off heat.
  • Then add your Thai basil and toss until evenly distributed.
  • Best served with rice and topped with a fried egg sprinkled in paprika, black pepper, and sea salt.
