Smothered Breakfast Burrito

Cookware & Appliances Needed

  1. Convectional oven
  2. Stovetop or Hot plate
  3. 10 inch pan
  4. Small mixing bowl
  5. Oven safe plate

Ingredients

  1. Eggs – 3
  2. Chorizo, cooked – 1/3 cup
  3. Herbes de Provence – 1/2 TSP
  4. Mexican style 4-cheese blend – 8 oz
  5. Flour Tortilla
  6. Red Chili
  7. Neutral cooking oil

Instructions

LET’S COOK

  • Cook the chorizo.
  • In a small mixing bowl, crack the eggs and add the Herbes de Provence seasoning. Mix.
  • In a 10 inch pan, over medium low heat. Add neutral cooking oil.
  • Then add the egg mixture. Once half way cooked, fold in the cooked chorizo.
  • Once cooked, set aside for later assembling.

ASSEMBLE

  • Wrap the cooked eggs and chorizo in a flour tortilla.
  • Place the folded ends of the tortilla face down, on top of the plate.
  • Pour a generous amount of the red chili on top of the burrito.
  • Sprinkle the Mexican style 4-cheese blend on top of the burrito.
  • Place the oven safe plate in a convectional oven and broil on high for 2-3 minutes or until the cheese is melted.
  • Enjoy!
