Cookware & Appliances Needed
- Convectional oven
- Stovetop or Hot plate
- 10 inch pan
- Small mixing bowl
- Oven safe plate
Ingredients
- Eggs – 3
- Chorizo, cooked – 1/3 cup
- Herbes de Provence – 1/2 TSP
- Mexican style 4-cheese blend – 8 oz
- Flour Tortilla
- Red Chili
- Neutral cooking oil
Instructions
LET’S COOK
- Cook the chorizo.
- In a small mixing bowl, crack the eggs and add the Herbes de Provence seasoning. Mix.
- In a 10 inch pan, over medium low heat. Add neutral cooking oil.
- Then add the egg mixture. Once half way cooked, fold in the cooked chorizo.
- Once cooked, set aside for later assembling.
ASSEMBLE
- Wrap the cooked eggs and chorizo in a flour tortilla.
- Place the folded ends of the tortilla face down, on top of the plate.
- Pour a generous amount of the red chili on top of the burrito.
- Sprinkle the Mexican style 4-cheese blend on top of the burrito.
- Place the oven safe plate in a convectional oven and broil on high for 2-3 minutes or until the cheese is melted.
