Shrimp Scampi

The Meal You Cook Once You Go Exclusive

Probably not a great idea for the first date or the date you go in for that first kiss. However, the best meal for when you know it’s finally true love.

Cookware & Appliances Needed

  1. Stovetop or Hot plate
  2. 5 qt sauté pan
  3. Wok Spatula or Wooden Spoon
  4. 5-8 qt pot
  5. Large mixing bowl or gallon freezer bag
  6. Knife of choice
  7. Cutting board

Ingredients for shrimp marinade

  1. Lemon – 1/2 ( of 1 whole lemon)
  2. Garlic cloves – 3 whole
  3. Dash salt free chipotle seasoning – 1/2 TSP
  4. Lemon pepper seasoning – 1 TSP
  5. Olive oil – 1 TBSP
  6. Shrimp (shelled & deveined) – 1/2 lb

Ingredients for pasta sauce/pasta

  1. Butter – 2 TSP
  2. Olive oil – 1 1/2 TBSP
  3. Garlic cloves – 5 whole
  4. Green onions – 1 stalk
  5. Lemon – 1/2 ( of 1 whole lemon)
  6. Roma tomatoes – 2 whole
  7. Angel hair pasta – 8 oz
  8. Starch water – 1/3 cup
  9. Parmesan cheese, grated – 4 TBSP

Instructions

MARINATE

  • Peel the garlic and trim the ends. Then mince.
  • Zest a whole lemon then set some aside for the pasta sauce for later use.
  • Cut the lemon in half, save the other half for the pasta sauce.
  • Deshell the shrimp, then wash and dry.
  • Transfer shrimp to a mixing bowl or a gallon freezer bag.
  • In your container of choice, add Dash salt free chipotle seasoning, lemon pepper seasoning, olive oil, lemon zest (of 1/2 a lemon), and freshly squeezed lemon juice (of 1/2 a lemon).
  • Combine seasoning and ensure shrimps are evenly coated with the seasoning. Then marinate for a minimum of 4 hours.

PREP

  • Cook the angel hair pasta per manufacturer’s guidelines. Once done, save 1/3 cup of the starch water for the pasta sauce.
  • Wash and dry all produce.
  • Dice the Roma tomatoes and set aside.
  • Dice the green onions and set aside.
  • Peel the garlic clove and cut off the dry stem ends. Then mince and set aside.
  • Retrieve the lemon zest and 1/2 of a whole lemon from earlier.

LET’S COOK

  • In a 5 qt pan, over low-medium heat, add 1/2 TBSP (of 1 1/2 TBSP) of olive oil. Pan sear the marinated shrimp. Once cooked, remove the shrimp and set aside.
  • In the same pan (do not discard the seasoning), over medium heat, add 1 TBSP (of 1 1/2 TBSP) of olive oil and butter to deglaze the pan.
  • Then add minced garlic.
  • Once fragrant, add lemon zest and diced Roma tomatoes.
  • Then add cooked angel hair and starch water.
  • Give a good toss and once the starch water reduces, add freshly squeezed lemon juice and grated parmesan cheese.
  • Once cheese is melted and pasta is well combined, turn off heat.
  • Assemble your dish by plating your pasta and placing your cooked shrimp on top. Optional: garnish with diced green onions.
