Cookware & Appliances Needed
- Stovetop or Hot plate
- 8 quart sauté pan
- Cutting board
- Knife of choice
- Utensil to serve/cook
Ingredients for red chili
- Ground beef – 2- 2.5 lb
- Yellow onion – 1 whole
- Garlic – 3 cloves
- Oregano – 1 TBSP
- Ground black pepper – 1/2 TSP
- Salt – 1/2 TSP
- New Mexico hatch chili powder – 4 TBSP
- All purpose white flour – 3 TBSP
- Beef bone broth – 3 cups
- Olive oil – 2 TSP
Ingredients to assemble the Frito pie
- Frito Original corn chips – 1 bag
- 4-blend Mexican cheese – 8 oz
- Pinto beans, cooked – 32 oz
- Lettuce, shredded – 16 oz
- Roma tomatoes, diced – 2 whole
Instructions
PREP
- Peel the outer layer of the onion. Cut the bottom and top portions off, then dice.
- Peel the outer layer of the garlic and cut the dry stem end off, then mince.
LET’S MAKE THE RED CHILI
- In a 8 quart sauté pan, over medium heat, add olive oil. Once hot, add the diced onions and minced garlic; then stir.
- When onions become translucent and garlic is fragrant, add the ground beef.
- Brown the ground beef and then add oregano, ground black pepper, and salt. Stir to ensure seasoning is well combined. Consider draining the ground beef grease at this point for best results.
- Turn down the heat down to low, and add the all purpose white flour and New Mexico hatch chili powder. Give a good stir.
- Once well mixed, add the beef bone broth and reduce at medium-low heat with the lid slightly ajar. When the red chili passes the spoon test, turn off the heat.
ASSEMBLE
- In a bowl, place the Frito Original corn chips at the bottom.
- Followed by 4-blend Mexican cheese, cooked pinto beans, red chili, shredded lettuce, and topped with diced Roma tomatoes.
